Το Εργαστήριο Οργάνωσης Παραγωγής υποστηρίζει εκπαιδευτικές δραστηριότητες και διεξάγει πρωτότυπη έρευνα στην περιοχή της ανάλυσης συστημάτων με μεθόδους επιχειρησιακής έρευνας, εφαρμοσμένης πιθανοθεωρίας και σταστιστικής, και αυτομάτου ελέγχου, και εφαρμογές στον προγραμματισμό/έλεγχο παραγωγής/λειτουργιών, διαχείριση εφοδιαστικής αλυσίδας, σχεδιασμό αγορών ηλεκτρικής ενέργειας, διαχείριση περιβάλλοντος, κ.α.
